Vegan Winter warmers | Easy & cosy vegan recipes
As the temperatures drop, it’s time to start cooking some delicious, hearty meals to keep ourselves warm and cosy. Here are 3 easy vegan Winter recipes to add to your menu this season!
3 vegan Winter warmer recipes you need to try
This first recipe was created by the lovely Ada, who’s sharing a bunch of nutritious recipes on her blog Laforance.
Soul Warming Red Soup
Ingredients: ( for two servings )
2 large tomatoes
2 large carrots
2 celery sticks
1 onion
1 garlic clove
1 red bell pepper
2 tbsp olive oil
salt and pepper to taste ( I like to use smoked sea salt )
chili flake
3 basil leaves
Starting to chop all the fresh ingredients. In a medium pot add the olive oil and the onions. After 5 minutes add the carrots & the celery sticks. Make sure you keep stirring everything in the pot.
Then add the bell pepper and some salt, pepper & garlic.
Once it’s all in the pot, keep mixing it for another 5minutes, then add ¼ cup water and cover the pot. Once all the veggies are soft you can add the chopped tomatoes.
Mix it all together and top up the pot with 3 cups of cold water. Add the basil leaves and leave it on for another 20 minutes.
Remove the basil leaves and blend the soup in the end for that extra creamy texture. Serve with fresh basil leaves and chilli flakes. Serve with either plain toasted sourdough or vegan grilled cheese sandwich :)
