Easy vegan mac and cheese recipe | Lazy & cosy
Can you think of anything more comforting than a generous bowl of mac & cheese when it’s dark and cold outside? Here’s my super easy vegan mac & cheese recipe.
Some will say it’s a loose interpretation of the classic mac & cheese but it tastes amazing and it’s all that matters :) If you love lazy & cozy vegan recipes, this one is for you!
Quick and easy vegan mac and cheese recipe
Ingredients for 2 servings
200ml almond milk
100g vegan cheese (I used Applewood Smokey Vegan Cheese )
20g vegan butter (I used Naturli)
2 tablespoons plain flour
150g pasta (I used penne)
Easy & lazy vegan mac and cheese recipe step by step
Start cooking the pasta.
Melt the butter in a saucepan then add the flour and stir. Slowly add the milk whilst you keep stirring, then the nutritional yeast. Allow it to simmer for a few minutes.
Grate the cheese and add it onto the pan. Stir, turn the heat off and let the cheese melt, making the texture even creamier.
Add salt and pepper and stir one last time.
Drain the pasta once cooked then pour in the saucepan and mix together.
Serve immediately (you can add some extra cheese & nutritional yeast) with some greens or leaves on the side.

PS: for a more traditional version, bake in the oven for a few minutes (with extra grated cheese on top) before serving.
Final Notes
A lazy & not so cheesy mac & cheese
I know, it’s not as cheese-loaded as the classic version but I don’t really enjoy (neither does my stomach) having too much cheese at once! I made the recipe based on my own preference but if you love the taste of melted cheese by all means, add more!
How to make a nut-free vegan mac and cheese?
This recipe is pretty much nut-free. All you need to do is swap the almond milk for nut-free milk such as soya milk.
