The easiest vegan pancake recipe

If there’s one thing that you can make vegan without too much effort, it’s pancakes. Although there are many sophisticated vegan pancake versions out there, my favourite recipe is simple and minimal, yet delicious.

Here’s the easiest vegan pancake recipe for a cozy weekend brunch.

Ingredients - for 1 serving

This recipe makes 3 pancakes. Simply double the measurements if you’re making this recipe for two.

  • 75g self-raising flour

  • 1 teaspoon baking powder

  • 1 tablespoon sugar or sweetener

  • A few drops of vanilla flavouring - I use MyProtein flav drops

  • 180ml almond milk

  • 1 tbsp oil for cooking

To serve (optional): your favourite fruits, plant-based yogurt, vegan choc chips, syrup

The easiest vegan pancake recipe step by step

In a large bowl, combine the flour, baking powder, sugar, vanilla flavouring. Then pour in the milk and whisk together until you get a smooth batter.

The consistency should be quite thick, otherwise your pancakes might become crepes. If it seems a bit too runny, just add some flour. It the batter is too thick (like cookie-dough) then add some more milk.

Add some oil in a non-stick pan over medium heat. Once the pan is really warm, use a ladle to pour in some of the batter in the pan. Let is cook for a couple minutes then flip the pancake over and cook for a further 2 minutes.

Repeat with the rest of the batter.

The final touch

Serve with your favourite toppings. I love serving mine with berries, a sprinkle of cinnamon and either coconut yoghurt or almond yoghurt.
