Super easy vegan protein waffle recipe
I recently got a waffle maker and it’s already been put to use quite a lot! I found a simple vegan waffle recipe online which is absolutely awesome and I tweaked it to make it higher in protein (more satiating!) and perfect the serving size for my own waffle maker.
Here’s how I make super simple and delicious vegan protein waffles :) If you’re looking for a simple Veganuary breakfast idea (or at any time of the year), give these waffles a go!
Which vegan protein powder is best for protein waffles?
I have tried numerous vegan protein powder brands and some work better than others when it comes to baking or making pancakes, waffles etc.
Flavour-wise, vanilla is my favourite. Chocolate is always a bit of disappointing in my opinion. If you want something a bit more adventurous than vanilla, then salted caramel would be an option.
My specific brand recommendation is:
MyProtein Soy Protein Isolate in Vanilla
Ingredients for the vegan protein waffles
This makes 2 waffles (2x4 quarter waffles) with this waffle maker that I’m using.
230g self-raising flour
25g vegan protein powder
30g sugar
30g melted vegan butter
350ml almond milk (or any plant milk)
1 teaspoon vanilla extract
1/2 teaspoon baking powder
The easiest way to make vegan protein waffles
Start by preheating your waffle maker.
Simply combine all the dry ingredients in a mixing bowl. Melt the butter then pour it in the bowl. Finally, add the milk and mix thoroughly until you get a smooth batter.
Use some vegan butter or cooking oil spray to grease both sides of your waffle iron. Then scoop up some of the batter and pour it in the middle. With this recipe and my waffle maker, I use half of the batter, making two batches.
Close the waffle maker and let it cook for as long as recommended for your appliance. It’s usually just a few minutes.
Open it and serve immediately or keep in a warm oven until all the waffles are ready.
Finally, top your waffles with your favourite toppings. Vegan chocolate spread, berries, banana, vegan whipped cream, Biscoff Lotus topping sauce, golden or maple syrup, coconut flakes… the options are endless!
Enjoy :)
