Gooey Vegan chocolate chip cookies (with simple ingredients!)
I never really plan to do some baking, I just randomly feel inspired and I usually make up the recipe as I go. This “creation” is like my previous vegan cookies: super quick, easy and only requiring a few ingredients which you most likely have already.
I wouldn’t consider myself good at baking so if I can make these gooey vegan chocolate chip cookies, you definitely can too!
Ingredients for 10 medium size vegan chocolate chip cookies
1 cup oat flour (you can blend oats or use any other type of flour)
60g melted coconut oil
1/4 cup sugar or sweetener
50g dark chocolate chip cookies (or vegan milk chocolate)
Splash of almond milk
Vanilla extract (optional)
1/2 teaspoon baking soda
How to make these vegan chocolate chip cookies
Combine the coconut oil, oat flour, sugar, baking soda and vanilla flavouring in a large bowl.
Start mixing and add in some almond milk until getting a smooth (but not too runny) dough.
Finally, add the chocolate chips.
Form balls on a lined baking tray. Leave some space between them as they will flatten.
Bake for 15-20 minutes at 180°C.
(Try to) let them cool down before the taste test! I have to say, I was very pleased with the result!
Top tip if you’re not too sure about the consistency of the dough: I used 1/4 of the dough to bake a few cookies and check that the consistency was good.
You want gooey cookies but not too squishy!
I was happy with it so I used the rest but here’s what to do if:
it’s too runny: add some flour
it’s too hard: add a little bit of milk
